Home-Style Fried Rice
While my spouse is taking a trip to Taiwan, I cook all of my meals at home.
It is easy, yet hard as well, to cook for only one person, me myself.
Over the years, on several occasions when my spouse was away from home, I had learned the best way to cook for myself.
There are several dishes I love and know how to cook. Chop Suey (雜粹) and Fried Rice with Tomato and Scrambled Egg (蕃茄蛋炒飯) are those among them, and are my favorites. They are easy to make.
I usually cook "雜粹" (pork, eggs, cabbage, celery, cucumber, banboo shoots, fish balls, To-Fu and other "assorted pieces") in a large pan (一大鍋), which is often good for an entire week.
I like "蕃茄蛋炒飯", which is probably the easiest dish to make. I love egg, but for my age, I use only one egg each time. The tomatoes are from my garden, organic!
Before leaving home for her trip, she wanted to be sure that I would not be starving, she had prepared many other pre-cooked foods and 水餃, and kept them in the freezer.
I guess I will be likely to have gained some weight when she returns home next week.
